Baked Oatmeal is a hearty whole grain breakfast that is like a crumbly oatmeal cake. I start soaking the grains in the morning before I leave for work and I bake it when I get home. I cut it into squares and heat up a square for breakfast. I usually eat it with an egg.

You can make this recipe completely dairy-free by using nut or coconut milk and coconut oil. For breastfeeding moms, oats and coconut milk synergistically boost breastmilk production so it’s an awesome breakfast for new moms.

Oats are naturally gluten-free, however they are often processed in facilities that process wheat. To make this recipe strictly gluten-free, choose oats labeled “gluten-free” on the package.

A note on pre-soaking grains: In this recipe, the oats are soaked in an acidic medium for about 8-12 hours to break down the phytic acids naturally found in the oats. Breaking down these acids increases the nutrient availability in the oats so you get the most nutrition from your grains.

Ingredients: (for 8-12 servings)

1 1/2 cups of organic steel cut oats
3 eggs (preferably pasture-raised eggs)
1 cup organic whole milk, nut milk, or coconut milk (to make 1 cup of coconut milk: use 1/2 cup canned full-fat coconut milk and 1/2 cup of water)
2 TBSP of coconut oil, butter or ghee, softened at room temperature
1 TBSP of cinnamon (I use ceylon cinnamon)
1/4 cup dried organic cranberries or raisins
1-2 green apples, peeled and chopped (add 2 apples for a sweeter apple flavor)

First Step: Pre-soak the steel cut oats by covering the oats with fresh water in a bowl. Mix in one Tablespoon of yogurt, kefir, lemon juice, or apple cider vinegar to the oats. Cover and leave at room temperature for 8-12 hours (soak for less time- 6 hours if it’s a really warm kitchen).

Bake: Preheat your oven to 375 degrees Fahrenheit. Grease an 8×8 glass baking dish with butter or coconut oil.

Drain the soaked oats and rinse very well with fresh water. Drain the water and put the oats in a large mixing bowl.

In a separate bowl, beat together the eggs and milk. Pour the eggs/milk over the oats. Stir the mixture well.

Mix in fruit, dried fruit, cinnamon, and coconut oil/butter into the mixture.

Pour the mixture into the baking dish and smooth it out. Place baking dish in the pre-heated oven, and bake uncovered at 375 degrees for 40-45 minutes. You know it’s ready when the baked oatmeal is a light golden brown on top and when you poke a fork into the oatmeal, it comes out clean and free from liquid.

Allow the oatmeal to cool and cut into squares. Serve warm.
